COOKING WITH TURMERIC, RED CHILLI POWDER AND SALT (PART 2)

  In a dish, spices are used to enhance the taste of the main ingredient/s. I am trying to categorize the dishes (those I know) according to the spices used. I am neither a qualified chef nor a food scientist. I am just jotting down what I have learnt over the years with a hope, somebody may find it useful. In continuation to my last blog, here also I will continue cooking with Turmeric, red chili powder and salt. But now with Paneer (cottage cheese), Eggs, Prawn and Fish. The spices are same. The method is almost same but little bit different for each ingredient. Oil: Any oil can be used. If you like aroma of Mustard oil then it is preferred. Cooking pot: Preferably a wok/karahi Oven:   to be cooked on a gas stove   Paneer/Cottage cheese Add oil in the cooking pot, let the oil heat up (Quantity of oil should be little more than what used for vegetables).   Before I start let me give you a brief introduction of my life which is full of diversities. I studied physics in my graduation but became a computer programmer, as I was getting settled in the computer industry; I became wife of a geologist and then had an adventurous life for some time.   Then I settled down and managed my small company for few years, dealing in solar, fire extinguisher, sampling equipment for mining industry etc.etc. Then helped under privileged girls by teaching them to make different things using news paper and selling the products. During this journey also became mother of a boy, who grew up to become a Periodontist. And while all these things were happening, I was learning how to cook tasty meals. From my experience, I have learnt that best cooking is where you make a dish with minimum ingredients.
